Ecuadorian gastronomy is one of the most internationally recognized, thanks to the wide variety of components, flavors and preparations provided by the multiculturalism of its four regions and its twenty-four provinces. Each of the regions, coast, mountains, Amazon and the island region provides unique ingredients, according to their natural conditions.
Ecuadorian food was historically influenced by the original inhabitants of each region, but also by the Spanish conquistadors and through time, by foreign influences. On the coast, fish and seafood are very desirable and the famous “ceviche” is a dish that can not pass without being tasted by foreign or national tourists.
Galapagos or island region, has the best dishes made from seafood and fish typical of the place, such as cod with potatoes or seafood rice, always accompanied by green banana in its various preparations, such as chifles, tigrillo or bolones.
The cuisine of the Amazon is based on freshwater fish, seasoned with unique species and typical of the region and the most interesting is its ancestral preparation and different from everything that can be found in the other regions of the country.
